2 mango

2 balls of mozzarella

2 stalks lemongrass

2 chili peppers

1 tsp lime zest, grated

2 limes, squeezed

2 tablespoons cane sugar, or palm sugar

2 tbsp olive oil

2 tbsp coriander leaves, fresh

Preparation time 30 minutes

Peel the mangos, halve them and cut them into slices. Halve the mozzarella balls and also cut them into slices. Garnish the mango and mozzarella on plates in the shape of roof tiles. For the dressing, finely chop the lemongrass, remove the seeds from the chilli peppers and cut them into rings. Mix the lime zest, lime juice, sugar, lemongrass and chilli with the olive oil. Spread the dressing over the plates and garnish with coriander leaves
